Life on a roll… Gluten Free Pancakes

It’s been too long since I wrote the blog.. My food baby is really being neglected. Well, I can’t say that I have haven’t been baking or don’t have anything to write. The truth I have been baking up a storm and have so much to share. 

Gluten Free Pancakes


The whole family went for a long summer holiday to our favourite part of the world New York and we visited all our favourite places, met all are lovely friends. Had a “Gluten Free” blast with everything under the sun hamburgers, pizza’s, brownies, cupcakes and soooooo… much more. Mannat is such a sweet heart after taking his first bite of anything he always said “Mummy yours taste better”.

Mannat and Amanat read up a storm visiting bookshops and Public Libraries. Armaan loved going out every day and eating blueberries and kiwi. I loved my Starbucks coffee and brownie everyday till I woke up and so my tummy was growing.. Growing and then a chat with Greg left me in thought…

This weekend we had guests coming for breakfast on Sunday. That’s like Annat’s favourite meal in the day. He was going to open his new Le’Creuset Set and display his culinary skills in front of his friends.

I know a lot of people with gluten allergy find it tough to buy ready made mixes, honestly I love making everything from scratch. 
Recipe: Gluten Free Pancakes
Ingredients:
1 cup Brown Rice Flour
1 tbsp Castor Sugar
2 tsp Baking powder
¼ tsp salt
¼ tsp cinnamon powder
1 cup milk/ soy milk
1 no egg
1 tbsp vegetable oil
½ tsp vanilla extract
¼ cup chocolate chips (optional blueberries or bananas)
Method:
·        Mix all the dry ingredients into a bowl and then blend it in a mixer or use a good sieve a couple of times.
·        Whisk the egg, butter, milk and oil.
·        Now slowly add the flour to the egg mixture. It might be a little cuddly don’t worry it will come together.
·        At this time add more milk if it isn’t perfect consistency.
Tip:

  • The brown rice can be halved and you can use half cup ragi. They won’t look so nice but will taste great.
  • Add blueberries, banana, chocolate chips.
  • Pancakes can be made in advance and frozen.

    Hi Aarti, Last night I came across your blog (… looking for someone to do a birthday cake for my daughter who is turning one in a couple of months… ) I am highly gluten sensitive and today morning I couldnt resist making these pancakes for myself…(I am not fond of cooking/baking…)
    Just want to THANK YOU ! Cause they came out to be AMAZING!
    Please let me know if you doing any workshops soon? For gluten free stuff?

    And just for information: Can I place orders for Gluten free stuff ? Because I am working and don't have the time to try out…
