Healthy Cookies 2

As I promised I am going to cover two healthy cookies both have rolled oats and fruits in them. Banana Chocolate Chip and Orange&Oats Chewies.


Banana Chocolate Chip Cookies I baked sometime back. The cookies were great but shelf life is very little as the cookies have banana’s that get spoilt quickly.


Recipe: Banana Chocolate Chip
1 cup flour

  • 1/2 cup whole-wheat flour
  • 1 tsp coarse salt
  • 1/2 tsp baking soda
  • 3/4 cup unsalted butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 no. egg
  • 1 1/2 tsp pure vanilla extract
  • 1/2 cup mashed ripe banana 
  • 1 cup old-fashioned rolled oats
  • 1/2 cup chocolate chips
  • 1/2 cup coarsely chopped walnuts

Method: 
  • Preheat the oven to 375 degree C. Grease the cookie trays.
  • Sieve the dry ingredients flour,wheat flour,salt and the soda.
  • Beat the butter and sugar till light and fluffy. Add the vanilla and the egg.
  • Add the mashed banana.
  • Mix the flour mixture to the butter mixture. Slowly. Don’t over mix.
  • Stir in the oats,chocolate chip and walnuts.
  • Roll the cookies ( yes the mixture will be a little wet; don’t worry that is the banana)
  • Bake for 12-13 minutes till light and brown in colour.
  • Let them cool in the tray for 5 minutes and then transfer to a wire rack to cool further.
Tip:
  • Use only over ripe banana’s.
  • Store in air tight containers for a maximum of 2 days.

Kids will like the Orange and Oat Chewies as they are very chewy and sweet cookies; adults might find them too soft.

Recipe: Orange and Oat Chewies
2 cups flour
1tsp baking soda
1/2 tsp salt
2 cups rolled oats
2 cups brown sugar
1/2 cup salted butter
1/2 cup Crisco
3 tbsp orange juice
Grated zest of one orange 
2no. eggs
1 cup walnuts, chopped
1/3 cup shredded coconut 

Method:
  • Preheat the oven to 350 degree. Grease two cookie sheets.
  • Sieve the dry ingredients flour,baking soda and salt. Mix the oats in this mixture.
  • In a large combine the sugar,butter,Crisco,orange juice,orange zest and the eggs. Mix them well.
  • Add the flour mixture and blend it together.
  • Add the walnuts and coconut till they are combined.
  • Roll the cookies 2 inches apart.
  • Bake them for 12 minutes or till the edges are golden brown.
  • Cool them on the cookie sheets as when the cookies come out of the oven they will be very soft.
Tip:
  • I used desiccated coconut and since the season isn’t for oranges I used Tropicana orange juice and no zest.
  • Always bake small size cookies when baking for the first time; as they bake better.
