Goodbye 2015 and Welcome 2016 : Gluten Free Ginger Cookies

Happy 2016 ! I just love Christmas and everything about it. This year in November I decided to push myself and venture into the world of art and craft. Oh! this is way beyond my scope of work. Well, to be honest I grew up with a mom who is super talented when it comes to art and craft, flower decoration and all the good stuff ladies do embroidery, knitting, stitching .. and so on. I grew up wanting to earn more and get my picture taken. Well guess life had it’s on plan and I always like to say this God knows Best! you just need to trust him.I feel so lucky to have a life full of children with dirty noses and hugs to give me all day. Though I must confess I need a break at times and need a place to run away too.

This year for Christmas I made an advent calendar by decorating a cupcake tray with 24 covers and each cover I decorated with a lot of care with dolly paper, paint, glitter and the list…. so long the final product looked like this.

While I know for a lot people working with paper and decorating comes easy for me it’s a huge task and fighting your own weakness is a step towards the unknown. 24 things for the kids to do was fun to make we had all sorts of stuff from baking, decorating, inviting friends, donating, making handmade gifts, colouring, shopping, packaging and so on.. both Mannat and Amant enjoyed opening each one. Next year .. I plan another advent as it so nice to make one.
It was the first year we put up a tree on 1st December and decorated it with all the ornaments we have collected from various travels.. each one has a memory attached. I think it’s amazing that as years go buy they look even prettier and the memory grows. And while we were putting some broke and we all cried around it.

I made a promise to the kids that in the month of December I would bake everyday and it was so much fun.. lots of new stuff that I have always wanted to bake even the real tough stuff like gluten free biscotti.

Christmas Party Favours : homemade breads and homemade crayons
One of the kids had a cold and I thought I should make a cookie that will cure the cold. these cookies were yum and with ginger, cinnamon, cloves, ginger syrup and ginger chips.It’s a perfect remedy.
Recipe: Gluten Free Ginger Cookies:
makes: 15-20no
5 tbsp Unsalted Butter
1/3rd cup sugar
2 tbsp Gur
1 tbsp Ginger Syrup
1 no egg
1/2 tsp vanilla extract
1 cup gluten free all purpose flour ( BFMH flour had brown rice and amaranth)
1/2 tsp xanthum gum
1 tsp soda
11/4 tsp cinnamon powder( grind fresh)
3/4 tsp fresh ginger
1/2 tsp c love( crushed)
Hand full of Ginger Chips.
  1. Sieve all the dry ingredients together and set aside.
  2. Beat the butter, vanilla, egg and all the different sugars till light and fluffy.
  3. Mix the dry ingredients into the wet ingredients and wrap in cling film and allow it to rest in the refrigerator for a couple of hours.
  4. Just roll the cookies and bake in a preheated oven of 350 degree C for 12 minutes or till slightly brown.
  5. Eat them warm milk and say goodbye to colds.
Life was going on smoothly and we were all very excited about kids Christmas parties we planned to have 4 with different set of friends and were going to London to spend Christmas and New Years and then suddenly my brother fell very sick. It was a nightmare to spend all of December going up and down from Medicity with most days looking so grey. It was very hard on the kids. I organized the first party and cancelled everything else.
Both the older kids were concern and showed a lot of care for Rahul. I would have never lived in so much stress and the fear of loosing my brother was scary. I also learnt that most people around you who you think care especially family somehow let you down. And some friends were ready to do anything to help. Guess this is life and even at almost 40 I have so much to learn.

My darling daughter who baked her first cake and decorated it. Life has a lot of first and you will cherish each and will remember them till you live. Mama loves you.

I put in so much effort to make all the school party food in a gluten free version and then decorated the basket and guess what Mannat didn’t want to take it. As a mom of a growing boy I understand that it is tough to be in this horrible world. My darling boy life will teach you so much just remember your mom loves you so much and will always be there for you.
