Flourless Chocolate and Zucchini Muffins : I Love Birthdays

I love birthdays and I am so glad that I have 3 kids to add to my little zoo. I was doing some future maths and in which if each kid as 3 kids each. I’ll have 9 grand kids, plus 3 kids with 3 spouses and 2 of us. That means I’ll have minimum 15 cakes to bake in a year and all the festivals. Guess my future seems very busy already. Ha ha.

Blue Popcorn and baby biscuits
It was my little bonus Armaanu’s birthday. Funny how each kid has a baby name Mannat was always “Mannat Raja”, Amanat was ” Mithi Rani” and Armaan is “Armaanu”. They all grow so quickly. I love babies and I think I am so fortunate to raise them myself instead of all the kids being raised by maids. I had a horrible experience the other day during Diwali, I took Amanat for a Diwali Party for kids and I was the only mum all dressed up in a saree with 25 maids. Either I am crazy or…
Recipe: Flourless Chocolate Zucchini Muffins
Makes: 12 muffins
Ingredients:
½ cup almond
butter (Barney Butter : Raw +Chia)
1 overripe
banana
¼ cup honey
¼ cup cocoa
powder
½ tsp baking
soda
1tsp vanilla
extract
1 cup
zucchini shredded and squeezed of excess liquid
¼ cup
chocolate chips
1tbsp flax
seeds (soaked in water till it becomes a jelly)
Method:
·
Preheat the oven to 375 degree F and prepare the
muffin tray.
·
In a free standing blender add all the
ingredients and stir to smooth and creamy. Stir the zucchini and chocolate chips
by hand.

Pour batter into a prepared muffin tray and
sprinkle with chocolate chips.
·
Bake for 20 minutes or till done test it with a
toothpick.
·
Allow the muffins to cool before removing them
from the pan.
Tips:
·
Please use any other butter, the recipe will
work too. While I am fortunate to get a lot ingredients from US. I do believe
that local ingredients can make equally good product.
o    I had so much fun organizing Armaan’s party with all the lovely little blue 1st cookies, cupcakes and
his cake with all his favourite toys. We had just family and a few close friends come for the birthday. Armaan crawled under the table with ballons and wore jeans and a blue shirt. Annat took his picture in the morning of his birthday and made sticks which were stuck on the water bottles, the cookie jars( favours).I put in so much effort to make a smash cake and guess what Armaan didn’t smash it 🙁
 Diwali was super nice and I made the impossible gluten free rasgulla, kalakand and besan ladoo. Very proud of fighting my own fears.

    This looks delicious! Cant wait to try it. Can you find almond butter in Delhi? I've seen cashew butter but not almond.

    I haven't tired to find almond butter here.I would recommend using cashew butter. Please let me know how the recipe turned out.
