Comfort Food : Gluten Free Chocolate Pound Cake

Baking for me is my friend who always listens to my heart, wipes my tears and I know
the minute the cake is baked I know my problem will be gone. My best and most trusted friend. 

Yesterday, the house seemed so quite Mannat was playing a chess tournament and I promised that I couldn’t keep calling and checking, Amanat had gone out with her father and Armaan was sleeping. Guess once they all fly from the nest I will always have my best friend “baking” and will bake up a storm while they lead there own lives away from me. 

Sharing my comfort food a very simple and plain chocolate cake perfect with a cup of coffee to make you smile while you enjoy your own silence.
Gluten Free Chocolate Pound Cake
Gluten Free Chocolate Pound Cake:
Makes : 1 loaf tin

150 gms unsalted butter
100 gms cream cheese
1 1/2 cup brown sugar
2 eggs plus 2 egg yolks
1 tbsp vanilla extract
1 cup gluten free all purpose flour 
1/2 cup cocoa powder
1 tsp soda
1 tsp salt
1/2 cup cream
  • Prepare a loaf tin or a bundt pan with some butter or parchment paper.
  • Preheat the oven to 95 degree C
  • In a free standing fixer blend the cream cheese, butter and sugar. Add eggs one at a time along with the vanilla extract.
  • Whisk the dry ingredients flour, cocoa powder, salt and soda.
  • Add the flour mixer in three batches and finally add the cream.
  • Bake the cake for 20 minutes at 95 degree C, then increase the oven temperature to 120 degree for 20 minutes, then to 135 degree for 10 minutes and finally to 145 degree C for 10 minutes. Remove from the oven once the tester comes clean.

  • Everything must be at room temperature including the cream cheese.
  • I use Flanders Mascarporne Cheese easily available at Modern Bazzar, Vasant Vihar. The Flanders Cheese Company have an inclusive outlet at Merchand Market.
  • I use my own BFMH gluten free flour blend but I am sure Bob Red Mill Gluten Free 
  • The quality of cocoa powder will effect the quality of the end product including the colour.
